Adobo Chips With Warm Goat Cheese And Cilantro Salsa Recipe

Ingredients
  •  Cheese:
  • 1/4 c minced red onion
  • 1/4 c (2 oz) goat cheese
  • 1 (7-oz) can chipotle chiles in adobo sauce
  •  Chips:
  • 1/4 c fresh lime juice
  • 2 1/2 tsps fresh lime juice
  • 1/2 tsp paprika
  • 8 (6-inch) white corn tortillas
  • 1 tsp canola oil
  • 1/2 c (4 oz) block-style fat-free cream cheese, softened
  • 2 c sliced fresh cilantro (about 1 bunch)
  •  Salsa:
  • 1 c finely sliced tomatillos (about 4 medium)
  • 1/4 tsp cumin
  • 1 tsp adobo sauce

Directions
  • Step #1 To prepare salsa, remove 2 chipotle chiles from can; finely chop to measure 2 tsps.
  • Step #2 Remove 1 tsp adobo sauce from can, & set aside (reserve remaining chipotle chiles & adobo sauce for another use).
  • Step #3 Combine chiles, cilantro, tomatillos, onion, & 1/4 c lime juice in a medium bowl; cover & chill for 1 hr.
  • Step #4 Preheat oven to 375°.
  • Step #5 To prepare chips, paprika, adobo sauce, & cumin in a small bowl, canola oil, mix 2 1/2 tsps lime juice, stirring with a whisk.
  • Step #6 Brush 1 tortilla with about 1/4 tsp juice mixture, spreading to edge.
  • Step #7 Top with another tortilla; repeat procedure with juice mixture.
  • Step #8 Repeat procedure 6 more times (you will have 1 stack of 8 tortillas).
  • Step #9 Using a sharp knife, cut tortilla stack into 6 wedges.
  • Step #10 Place wedges in a single layer on baking sheets.
  • Step #11 Bake at 375° for 15 mins; turn wedges.
  • Step #12 Bake an extra 10 mins.
  • Step #13 Reduce oven temperature to 350°.
  • Step #14 To prepare cheese, mix cream cheese & goat cheese in a small bowl; stir until mixed.
  • Step #15 Spread cheese mixture into a shallow 6-oz ramekin or baking dish; cover with foil wrap.
  • Step #16 Bake at 350° for 10 mins or just until warm.
