Edamame Dip Recipe

Ingredients
  • 1/2 tsp salt
  • 1/4 c sliced red onion
  • 2 tbsps rice vinegar
  • 1/2 c water
  • 3 tbsps sliced fresh cilantro
  • 1 tbsp olive oil
  • 1 1/2 tsps chili garlic sauce (such as Lee Kum Kee)
  • 1 1/2 c frozen shelled edamame (green soybeans), thawed & cooked
  • 1 (16-oz) can cannellini beans or other white beans, drained

Directions
  • Step #1 Place all ingredients in a food processor/blender, & process until smooth.
  • Step #2 Serve as soon as possible, or cover & chill in the fridge.
