Basil Aioli Recipe

Ingredients
  • 1/2 c extra-virgin olive oil
  • 1 c loosely packed basil leaves
  • 2 cloves garlic, minced
  • 1/2 tsp each dried mustard, lemon juice, salt, & pepper
  • 2 egg yolks
  • 1/2 c canola oil

Directions
  • Step #1 Bring a large pot of salted water to boil.
  • Step #2 Dunk basil leaves into the boiling water for 20 seconds.
  • Step #3 Drain & squeeze out as much excess water as possible.
  • Step #4 In a mixer, whirl blanched basil leaves with olive & canola oils.
  • Step #5 Empty into a measuring c or small pitcher & reserve.
  • Step #6 In a medium bowl, salt, mustard, lemon juice, whisk together egg yolks, garlic, & pepper.
  • Step #7 Whisk in a drop of the basil oil; continue adding drops of oil, whisking until mixture thickens to a mayonnaise-like consistency.
  • Step #8 Continuing to whisk, pour in remaining basil oil in a very thin stream.
  • Step #9 Spice up with extra salt & pepper to taste.
  • Step #10 Note: Nutritional analysis is per tbsp.
