Dressed Up Tuna Salad Recipe

Ingredients
  • 2 (6 oz) cans light water-packed tuna
  • 1 head romaine lettuce, torn
  • 1 pint cherry tomatoes, halved
  • 4 oz Swiss cheese, julienned
  • 1/2 tsp pepper
  • 1/2 c olive or vegetable oil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 3 tbsps balsamic or red wine vinegar
  • 4 hard-cooked eggs, cut into wedges
  • 1/2 c sliced red onion

Directions
  • Step #1 Arrange romaine on four salad plates.
  • Step #2 Top with the tomatoes, cheese, eggs, tuna & onion.
  • Step #3 In a jar with a tight-fitting lid, oregano, mix the oil, vinegar, salt & pepper.
  • Step #4 Drizzle over salads.
  • Step #5 Serve as soon as possible.
