Ginger Shrimp With Sweet-spicy Thai Dipping Sauce Recipe

Ingredients
  • 1/2 c rice vinegar
  • 3 tbsps fresh lime juice
  • 2 lbs large shrimp, shelled & deveined
  •  Celery sticks & cucumber spears, for serving
  • 1/4 c sugar
  • 4 c small ice cubes
  • 1 1/2 tsps Asian fish sauce
  • 1/2 c sweet Thai chili sauce
  • 6 dried red chiles, broken into several pieces
  • 1/2 c thinly sliced ginger (2 1/2 oz), lightly crushed with the side of a knife blade
  • 2 tbsps ketchup

Directions
  • Step #1 In a small saucepan, mix the ginger with the vinegar, sugar & chiles.
  • Step #2 Bring to a boil, stirring to dissolve the sugar.
  • Step #3 Transfer to a large bowl; let cool.
  • Step #4 In a large pot of boiling salted water, simmer the shrimp until pink & cooked through, about 2 mins.
  • Step #5 Drain the shrimp & add them to the ginger mixture.
  • Step #6 Stir in the ice cubes & put in the fridge for at least 4 hrs or overnight.
  • Step #7 Drain the shrimp & pat dry.
  • Step #8 Discard the ginger & chiles.
  • Step #9 In a small bowl, mix the Thai chili sauce with the lime juice, ketchup & fish sauce.
  • Step #10 Refrigerate until chilled.
  • Step #11 Arrange the shrimp on a platter with the celery sticks & cucumber spears & serve this with the sauce.
  • Step #12 Make Ahead: The marinating shrimp & the dipping sauce can be put in the fridged separately overnight.
