Spicy Seafood Salsa Recipe

Ingredients
  • 3 tbsps fresh lime juice
  • 3 tbsps sliced green onions
  • 1/4 tsp salt
  • 1 c seeded, sliced tomato
  • 3 tbsps minced fresh cilantro
  • 1/4 tsp freshly ground pepper
  • 1 (1-lb) swordfish, amberjack, or grouper fillet
  • 1/4 tsp ground cumin
  • 3 jalapeño peppers, seeded & finely sliced
  • 1/2 c sliced yellow bell pepper
  • 2 tbsps olive oil
  • 1/2 c sliced red bell pepper

Directions
  • Step #1 Fish in a Flash: Pour water to a depth of 2 inches into a large skillet; bring to a boil.
  • Step #2 Add fish, & return to a boil.
  • Step #3 Cover up, reduce heat.
  • Step #4 & let simmer 5 to 8 mins or until fish flakes with a fork.
  • Step #5 Remove from skillet with a slotted spoon; cool slightly.
  • Step #6 Flake into bite-size pieces.
  • Step #7 Stir together fish & remaining ingredients.
  • Step #8 Cover up & chill at least 1 hr.
