Avocado-shrimp Cocktail Recipe

Ingredients
  • 2 firm-ripe avocados (1 to 1 1/4 lb. total)
  • 3 tbsps lime juice
  • 3/4 lb shelled cooked shrimp (50 to 70 per lb.), rinsed
  •  Kosher or regular salt
  • 1 can (11 1/2 oz.) tomato & chili cocktail (bloody Mary) mix
  •  Tortilla chips or saltine crackers
  • 1/3 c finely sliced onion, rinsed & drained
  • 2 to 3 tsps minced fresh jalapeño chili
  • 1/3 c tequila
  •  Lime wedges
  • 1/3 c sliced fresh cilantro

Directions
  • Step #1 In a bowl, onion, tequila, lime juice, cilantro, stir this together tomato & chili cocktail mix, & 2 tsps chili.
  • Step #2 Pit & peel avocados; cut into 1/2-inch cubes.
  • Step #3 Add avocados & shrimp to cocktail mixture.
  • Step #4 Mix carefully & add salt & more chili to taste.
  • Step #5 If desired, rub rims of 4 to 6 margarita or martini glasses with a lime wedge.
  • Step #6 Immediately dip into a dish filled with 1/4 inch kosher salt.
  • Step #7 Spoon avocado-shrimp cocktail equally into glasses.
  • Step #8 Garnish with lime wedges & serve this with tortilla chips or saltine crackers.
