Southwestern Cheese Appetizer Recipe

Ingredients
  • 1/2 tsp freshly ground pepper
  • 3 tbsps sliced fresh cilantro
  • 1/2 tsp salt
  • 1 (8-oz) block sharp Cheddar cheese, chilled
  • 1/2 c white wine vinegar
  • 1/2 c olive oil
  • 1 (8-oz) package cream cheese, chilled
  • 1 (8-oz) block Monterey Jack cheese with peppers, chilled
  • 3 green onions, minced
  • 1/4 c fresh lime juice
  • 3 tbsps sliced fresh parsley
  • 1 tsp sugar
  • 1/2 (7.5-oz) jar roasted sweet red peppers, drained & sliced

Directions
  • Step #1 Whisk together first 3 ingredients until mixture is mixed; stir in the sliced red peppers & next 6 ingredients.
  • Step #2 Set marinade aside.
  • Step #3 Cut block of Cheddar cheese in half lengthwise.
  • Step #4 Cut halves crosswise into 1/4-inch-thick slices.
  • Step #5 Repeat procedure with Monterey Jack cheese & cream cheese.
  • Step #6 Arrange cheese slices alternately in a shallow baking dish, standing slices on edge.
  • Step #7 Pour marinade over cheeses.
  • Step #8 Cover up & chill at least 8 hrs.
  • Step #9 Transfer cheese to a serving plate, & spoon remaining marinade over top.
  • Step #10 Serve with assorted crackers.
