Marinated Shrimp Bruschetta Recipe

Ingredients
  • 2 tbsps sherry vinegar or white wine vinegar
  • 1 clove garlic, pressed or minced
  •  Salt
  • 1 Roma tomato (3 oz.)
  • 1 tbsp drained capers, sliced
  • 1/4 c minced green onion
  • 1/4 c minced green bell pepper
  • 1 lb shrimp (36 to 42 per lb.), shelled & deveined
  • 1/4 lb fresh chèvre (goat) cheese
  • 2 tbsps olive oil
  • 1 baguette (8 oz.)

Directions
  • Step #1 In a 4- to 5-quart pan over high heat, bring about 2 quarts water to a boil.
  • Step #2 Add shrimp, cover, & cook just until opaque in thickest part (cut to test), about 2 mins.
  • Step #3 Drain.
  • Step #4 In a bowl, vinegar, mix oil, capers, garlic, & shrimp.
  • Step #5 Cover up & chill, stirring every once in awhile, at least 30 mins or up to 1 day.
  • Step #6 Trim tips from ends of baguette & cut remaining bread crosswise into 36 equal slices.
  • Step #7 Set slices on racks on a 14- by 17-inch baking sheet.
  • Step #8 Bake in a 425° oven until golden, 6 to 8 mins.
  • Step #9 If making ahead, store cool slices airtight up to 4 hrs.
  • Step #10 Seed & finely chop tomato.
  • Step #11 Add tomato, bell pepper, & onion to shrimp mixture.
  • Step #12 Spice up with salt to taste.
  • Step #13 Spread cheese on toast.
  • Step #14 Place vegetables & 1 shrimp on each piece.
  • Step #15 Nutritional analysis per piece.
