Black Bean–mango Salsa Recipe

Ingredients
  • 1/2 c each sliced orange & yellow bell pepper (or all 1 color)
  • 1 tbsp red wine vinegar
  • 1 clove garlic, peeled & minced
  • 1 can (15 oz.) black beans, rinsed & drained
  • 1 Roma tomato (about 1/4 lb.), rinsed, cored, & coarsely sliced
  • 1 tbsp minced fresh jalapeño chili
  • 1 c sliced firm-ripe mango
  •  Salt & pepper
  • 2 tbsps lime juice
  • 1 tbsp sliced fresh cilantro
  • 1/4 c finely sliced onion

Directions
  • Step #1 In a bowl, cilantro, onion, mango, bell peppers, mix beans, lime juice, jalapeño, tomato, garlic, & vinegar.
  • Step #2 Add salt & pepper to taste.
  • Step #3 Serve, or cover & chill up to 1 day.
  • Step #4 Nutritional analysis per 1/4 c.
