Harvest Sweet Potato Pecan Pie Tarts Recipe

Ingredients
  • 2 (2.1-oz) packages mini phyllo shells (such as Athens)
  • 1 egg white
  • 1 tbsp dark corn syrup
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1 c mashed cooked sweet potato
  • 1/8 tsp salt
  • 3 tbsps granulated sugar
  • 1/3 c sliced toasted pecans
  • 1/4 c firmly packed brown sugar

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine sweet potato, cinnamon, & salt, granulated sugar, stirring well.
  • Step #3 Combine pecans, syrup, brown sugar, & egg white, vanilla, stirring well.
  • Step #4 Spoon about 1 tsp sweet potato mixture into each phyllo shell, spreading to edges.
  • Step #5 Spoon about 1/2 tsp pecan mixture over sweet potato mixture.
  • Step #6 Place filled shells on an ungreased baking sheet.
  • Step #7 Bake at 350° for 20 mins.
  • Step #8 Cool completely on a wire rack.
