Roasted Red Pepper Salsa Recipe

Ingredients
  • 1/2 tsp fresh rosemary, finely sliced
  • 2 to 3 garlic cloves, minced
  • 3 tbsps sliced fresh basil
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1/2 c dried tomatoes*
  • 4 red bell peppers
  • 1/2 tsp salt
  • 1/4 tsp ground red pepper

Directions
  • Step #1 Bake peppers on an aluminum foil wrap-lined baking sheet at 500° for 12 mins or until peppers look blistered, turning once.
  • Step #2 Place peppers in a heavy-duty zip-top plastic bag; seal & let this stand 10 mins to loosen skins.
  • Step #3 Peel peppers; remove & discard seeds.
  • Step #4 Coarsely chop peppers.
  • Step #5 Drizzle with 1 tbsp olive oil; set aside.
  • Step #6 Pour boiling water to cover over dried tomatoes.
  • Step #7 Let stand 3 mins; drain & coarsely chop.
  • Step #8 Stir together bell pepper, basil, tomato, & remaining ingredients.
  • Step #9 Cover up & chill salsa up to 2 days, if desired.
  • Step #10 * 1/3 c dried tomatoes in oil may be substituted for dried tomatoes.
  • Step #11 Drain tomatoes well, pressing between layers of paper towels.
