Curried Chickpea Canapés With Ginger-carrot Butter Recipe

Ingredients
  • 2 1/3 c thinly sliced carrot
  •  Canapés:
  •  Cooking spray
  • 1 tbsp honey
  • 3/4 tsp fine sea salt
  • 1/4 tsp fine sea salt
  • 2 c water
  • 2 tsps minced peeled fresh ginger
  •  Butter:
  • 1 tbsp curry powder
  •  Remaining ingredients:
  • 2 2/3 c cold water
  • 1 tbsp fresh lemon juice
  • 2 tbsps finely sliced fresh cilantro
  • 1 c chickpea flour
  • 1/8 tsp white pepper
  • 1 tbsp butter
  • 2 tbsps sliced almonds, toasted

Directions
  • Step #1 To prepare canapés, lightly spoon flour into a dry measuring c; level with a knife.
  • Step #2 Combine flour, 2 2/3 c water, & 3/4 tsp salt in a medium saucepan, stirring with a whisk.
  • Step #3 Bring to a boil, stirring constantly.
  • Step #4 Cover up, reduce heat, & let simmer 20 mins.
  • Step #5 Uncover & stir with a whisk until smooth.
  • Step #6 Pour into an 11 x 7-inch baking dish coated with cooking spray; sprinkle evenly with curry powder.
  • Step #7 Chill 1 hr or until firm.
  • Step #8 Preheat oven to 375°.
  • Step #9 Cut chickpea mixture into 40 (1-inch) squares; place on a jelly roll pan coated with cooking spray.
  • Step #10 Bake at 375° for 20 mins or until golden.
  • Step #11 Cool.
  • Step #12 To prepare butter, 2 c water, mix carrot, butter, honey, & ginger In a large-ish saucepan.
  • Step #13 Bring mixture to a boil.
  • Step #14 Cover up, reduce heat, & let simmer 7 mins or until carrot is tender.
  • Step #15 Increase heat to medium-high; uncover & cook 12 mins or until liquid is absorbed.
  • Step #16 Combine carrot mixture, 1/4 tsp salt, lemon juice, & pepper in a food processor/blender; process until smooth.
  • Step #17 Place carrot butter in a zip-top plastic bag; seal.
  • Step #18 Snip a small hole in 1 corner of bag; pipe about 1 tsp carrot butter onto each canapé.
  • Step #19 Sprinkle top canapés evenly with almonds & cilantro.
