Step #2 Butterfly shrimp by making a deep slit lengthwise down the back from the large end to the tail, cutting to, but not through, the inside curve of shrimp.
Step #3 Rinse & pat dry.
Step #4 Combine orange rind, orange juice, & crushed red pepper in a shallow dish or heavy-duty zip-top plastic bag; add shrimp.
Step #5 Cover up or seal, & chill 20 mins.
Step #6 Remove shrimp from marinade, discarding marinade.
