Oven-fried Shrimp With Marmalade Dip Recipe

Ingredients
  • 1/4 tsp dried crushed red pepper
  •  Marmalade Dip
  •  Vegetable cooking spray
  • 1/2 tsp garlic pepper seasoning
  • 1/2 c fresh orange juice
  • 1 tsp grated orange rind
  • 1/2 c fine, dry breadcrumbs
  • 6 unpeeled, jumbo fresh shrimp
  • 1 (4-oz) container egg substitute

Directions
  • Step #1 Peel shrimp, leaving tails on.
  • Step #2 Butterfly shrimp by making a deep slit lengthwise down the back from the large end to the tail, cutting to, but not through, the inside curve of shrimp.
  • Step #3 Rinse & pat dry.
  • Step #4 Combine orange rind, orange juice, & crushed red pepper in a shallow dish or heavy-duty zip-top plastic bag; add shrimp.
  • Step #5 Cover up or seal, & chill 20 mins.
  • Step #6 Remove shrimp from marinade, discarding marinade.
  • Step #7 Combine breadcrumbs & garlic pepper seasoning.
  • Step #8 Dip shrimp in egg substitute, & dredge in breadcrumb mixture.
  • Step #9 Place on a baking sheet coated with vegetable cooking spray.
  • Step #10 Bake at 350° for 15 mins or until done.
  • Step #11 Serve with Marmalade Dip.
