Ingredients
1 (1.4-oz) package crispy pastry shells
1 (4-oz) goat cheese log, crumbled
1/3 c put in the fridged sweet pepper, vegetable, & olive bruschetta topping or tapenade
Garnish: fresh thyme leaves
Directions
Step #1 Place shells in a shallow pan.
Step #2 Divide goat cheese evenly between shells, pressing carefully to fill bottom of each.
Step #3 Spoon 1 tsp bruschetta topping into each shell.
Step #4 Bake at 350° for 4 to 5 mins or until thoroughly heated.
Step #5 Garnish, if desired.
Step #6 Pesto-Goat Cheese Cups: Substitute 1/4 c prepared basil pesto for 1/3 c bruschetta topping.
Step #7 Proceed as directed, omitting thyme leaves.
Step #8 Top with finely sliced tomato & toasted pine nuts after baking.
Step #9 Note: For testing purposes only, we used Siljans Croustades Crispy Shells & Gia Russa Sweet Pepper, Vegetable & Olive Bruschetta Topping.
