Ingredients
2 1/2 c sliced red bell pepper
1/2 c (2 oz) crumbled blue cheese
1/2 c nonfat cream cheese
Vegetable cooking spray
Parsley sprigs (optional)
1/8 tsp salt
1 tbsp tomato paste
8 (1/2-oz) slices very thin whole-wheat bread
1/8 tsp ground red pepper
16 (1/2-oz) slices very thin white bread
1/8 tsp salt
1/2 c sliced onion
3/4 c seeded & coarsely shredded peeled cucumber
1/8 tsp black pepper
Directions
Step #1 Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.
Step #2 Add bell pepper & onion; sauté 4 mins or until tender.
Step #3 Combine bell pepper mixture, & black pepper in food processor/blender, 1/8 tsp salt, tomato paste, & process until smooth.
Step #4 Return mixture to skillet, & cook over medium-high heat 3 mins or until thickened.
Step #5 Spoon mixture into a bowl, & let cool; cover & chill in the fridge.
Step #6 Place cucumber on several layers of paper towels; cover with extra paper towels, pressing until barely moist.
Step #7 Combine the cream cheese, & ground red pepper in a small bowl,1/8 tsp salt, blue cheese, stirring until smooth.
Step #8 Stir in cucumber; cover & chill in the fridge.
Step #9 Spread 2 tbsps bell pepper mixture over each of 8 slices of white bread; top each with a slice of wheat bread.
Step #10 Spread 2 tbsps cucumber mixture over each slice of wheat bread; top this with remaining white bread.
Step #11 Trim crusts from sandwiches.
Step #12 Cut each sandwich into quarters, squares, making rectangles, or triangles.
Step #13 Garnish with parsley sprigs, if desired.
Step #14 Note: If made ahead, cover sandwiches with a slightly damp paper towel & plastic wrap, & place this in an airtight container.
