Roasted Garlic And Potato Spread Recipe

Ingredients
  • 2 tbsps sliced fresh parsley
  • 1/2 tsp grated lemon rind
  • 3/4 tsp kosher salt
  • 1 large whole garlic head, unpeeled
  • 3 1/2 c cubed peeled baking potato (about 1 1/2 lbs)
  • 1/4 tsp black pepper
  • 1 tbsp fresh lemon juice
  • 1/8 tsp ground red pepper
  • 1/2 c plain fat-free yogurt
  • 2 tbsps extravirgin olive oil

Directions
  • Step #1 Preheat oven to 400º.
  • Step #2 Remove white papery skin from garlic head (do not peel or separate the cloves).
  • Step #3 Wrap head in foil wrap.
  • Step #4 Bake at 400° for 30 mins.
  • Step #5 Remove from oven; cool.
  • Step #6 Place potatoes in a medium saucepan, & cover with water; bring to a boil.
  • Step #7 Cook 19 mins or until very tender.
  • Step #8 Drain, reserving 1/2 c cooking liquid.
  • Step #9 Place potatoes In a large-ish bowl.
  • Step #10 Separate garlic cloves; squeeze to extract garlic pulp.
  • Step #11 Discard skins.
  • Step #12 Add pulp, yogurt, & next 6 ingredients (through red pepper) to potatoes.
  • Step #13 Mash potato mixture with a potato masher.
  • Step #14 Stir in reserved cooking liquid, 2 tbsps at a time, until mixture is almost smooth.
  • Step #15 Sprinkle top with parsley.
