Smoked Salmon Spread Recipe

Ingredients
  • 8 oz smoked salmon
  • 2 tbsps dry white wine (optional)
  • 2 tbsps sliced fresh dill
  • 2 tsps Dijon mustard
  • 1 1/2 c cottage cheese
  •  Salt & pepper
  • 2 tbsps lemon juice

Directions
  • Step #1 Line a strainer with cheesecloth & set over a bowl.
  • Step #2 Place cottage cheese in strainer, cover, & chill at least 8 hrs or up to 1 day.
  • Step #3 Discard liquid.
  • Step #4 Finely dice about a third of the salmon; coarsely chop remainder.
  • Step #5 In a mixer or food processor/blender, whirl drained cottage cheese, coarsely sliced salmon, wine, lemon juice, & mustard until smooth.
  • Step #6 Stir in sliced salmon, dill, & salt & pepper to taste.
  • Step #7 Spoon mixture into a bowl, cover, & chill at least 4 hrs or up to 2 days.
