Spicy Potatoes Recipe

Ingredients
  •  Chopped fresh cilantro
  • 2 tbsps vegetable oil
  • 1 c ketchup
  • 8 chapatis or whole-wheat tortillas (7 in.)
  • 2 lbs thin-skinned potatoes
  •  Indian red chili powder or cayenne
  • 1/4 c minced garlic
  • 1 tbsp pav-bhaji masala, purchased or homemade (recipe below)
  •  Salt

Directions
  • Step #1 Peel potatoes & cut into 3/4-inch chunks.
  • Step #2 In a 3- to 4-quart pan over high heat, bring 1 quart water & the potatoes to a boil.
  • Step #3 Reduce heat, cover, & let simmer until potatoes are almost tender when pierced, 7 to 10 mins.
  • Step #4 Drain & return to pan.
  • Step #5 Meanwhile, in a 6- to 8-inch frying pan over med-heat/flame, stir garlic in oil until it begins to turn golden, about 2 mins.
  • Step #6 Add ketchup, pav-bhaji masala, & salt & chili powder to taste.
  • Step #7 Add the seasoned ketchup to potatoes & mix to coat.
  • Step #8 Cover up & let this stand about 1 1/2 hrs.
  • Step #9 Pour potatoes into a 10- by 15-inch nonstick baking pan.
  • Step #10 Bake in a 375° regular or convection oven, stirring every once in awhile, until potatoes are tender when pierced, 10 to 15 mins.
  • Step #11 Scrape into a bowl & sprinkle with cilantro.
  • Step #12 Serve with chapatis.
  • Step #13 Pav-bhaji masala: In a small bowl, 1/2 tsp cayenne, mix 1 tsp ground coriander, 3/4 tsp ground cumin, & 1/4 tsp each ground cardamom & ground pepper.
