Ingredients
  •  Cooking spray
  • 1/4 tsp salt
  • 9 (1/2-inch-thick) slices pineapple, each cut into quarters
  • 3 garlic cloves, sliced
  • 1 serrano chile, halved
  • 1/4 c fresh cilantro leaves
  • 1 tbsp sugar
  • 1/4 c dry-roasted peanuts
  • 1 tbsp fish sauce
  • 12 oz pork tenderloin, trimmed & coarsely sliced
  • 1/3 c sliced green onions

Directions
  • Step #1 Place peanuts in a food processor/blender; process until finely ground.
  • Step #2 Spoon into a bowl; set aside.
  • Step #3 Place onions & next 5 ingredients (through chile) in food processor/blender, & process until finely sliced.
  • Step #4 Spoon into a bowl; set aside.
  • Step #5 Place pork in food processor/blender; process until coarsely ground.
  • Step #6 Heat a nonstick skillet over medium-high heat.
  • Step #7 Coat pan with cooking spray.
  • Step #8 Add ground pork; cook 4 mins or until done, stirring to crumble.
  • Step #9 Stir in onion mixture; cook 2 mins, stirring frequently.
  • Step #10 Stir in ground peanuts & salt.
  • Step #11 Serve pork mixture over pineapple pieces.
