Cinco De Mayo Shrimp Cocktail Recipe

Ingredients
  • 4 plum tomatoes, coarsely sliced
  •  Garnish: lime slices
  • 1/4 c fresh lime juice
  • 1/4 c sliced fresh cilantro
  • 30 unpeeled, large fresh shrimp
  • 1/2 tsp salt (optional)
  •  Lime-flavored tortilla chips
  • 1/4 tsp pepper
  • 1/2 red onion, sliced
  • 2 tsps sugar
  • 6 c water
  • 1/4 tsp chili powder
  • 1 large avocado, sliced
  • 2 garlic cloves
  • 1 jalapeño pepper, seeded

Directions
  • Step #1 Process first 10 ingredients in a mixer or food processor/blender until smooth, stopping to scrape down sides.
  • Step #2 Cover up & chill sauce up to 1 week.
  • Step #3 Bring 6 c water to a boil; add shrimp, & cook 2 to 3 mins or just until shrimp turn pink.
  • Step #4 Drain & rinse with cold water.
  • Step #5 Chill up to 24 hrs, if desired.
  • Step #6 Peel shrimp, leaving tails on; devein, if desired.
  • Step #7 Stir avocado into sauce; spoon sauce evenly into 6 chilled martini glasses or small bowls.
  • Step #8 Arrange 5 shrimp around edge of each glass; garnish, if desired.
  • Step #9 Serve with lime-flavored tortilla chips.
