Pickled Black-eyed Peas Recipe

Ingredients
  • 1/2 tsp salt
  • 2/3 c vegetable oil
  • 1 small onion, sliced
  • 1/3 c white wine vinegar
  • 2 (16-oz) cans black-eyed peas, rinsed & drained
  • 1 garlic clove, minced
  • 1/8 tsp pepper

Directions
  • Step #1 Stir together all ingredients; cover & chill mixture at least 2 hrs.
  • Step #2 Serve with tortilla chips.
  • Step #3 Marinated Black-eyed Peas: substitute olive oil for vegetable oil & 1/2 purple onion for onion; increase pepper to 1/2 tsp.
  • Step #4 Add 1 (16-oz) can whole kernel corn, minced; & 1/2 red bell pepper, drained; 1 jalepeño pepper, sliced.
