Stuffed Mushrooms Recipe

Ingredients
  • 4 oz 50%-less-fat pork sausage (such as Jimmy Dean 50% less fat)
  • 3 tbsps sliced green onions
  • 1/4 c (2 oz) 1/3-less-fat cream cheese, softened
  • 1 garlic clove, minced
  • 1/4 tsp kosher salt
  • 1/8 tsp black pepper
  • 24 large button mushrooms (about 1 3/4 lbs)
  •  Cooking spray
  • 3 tbsps grated fresh Parmesan cheese
  • 1/2 tsp crushed red pepper
  • 1/4 c dry breadcrumbs

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Clean mushrooms, & remove stems; finely chop stems.
  • Step #3 Heat a large nonstick skillet over medium-high heat.
  • Step #4 Coat pan with cooking spray.
  • Step #5 Add onions & garlic; sauté 1 min.
  • Step #6 Add sausage, & cook this until browned, stirring to crumble.
  • Step #7 Add the reserved mushroom stems, salt, red pepper, & black pepper; sauté 2 mins or until stems are tender.
  • Step #8 Remove from heat; stir in the cream cheese & breadcrumbs.
  • Step #9 Stuff 1 tbsp sausage mixture into each mushroom cap.
  • Step #10 Arrange mushroom caps in a 13 x 9-inch baking dish coated with cooking spray; sprinkle evenly with Parmesan.
  • Step #11 Bake at 400° for 30 mins or until lightly golden & thoroughly heated.
