Herb 'n' Spinach Cakes Recipe

Ingredients
  • 2 (10-oz) packages frozen sliced spinach, thawed, drained, & squeezed dry
  • 1 tbsp olive oil, divided
  • 1/2 tsp salt
  • 3 garlic cloves, minced
  • 3/4 c dry breadcrumbs, divided
  •  Red Pepper Sauce (optional)
  • 1/4 tsp pepper
  • 2 1/2 c mashed cooked peeled baking potatoes
  •  Vegetable cooking spray
  • 1/4 tsp ground nutmeg
  • 1 tsp dried rosemary, crushed
  • 2 egg whites
  • 1 1/2 c sliced onion
  • 1/4 c grated Parmesan cheese

Directions
  • Step #1 Coat a large nonstick skillet with cooking spray, & place over medium-high heat until hot.
  • Step #2 Add onion & garlic; sauté 5 mins or until tender.
  • Step #3 Add rosemary, nutmeg, & spinach; cook 2 mins.
  • Step #4 Place spinach mixture In a large-ish bowl; let cool slightly.
  • Step #5 Add mashed potatoes, 1/4 c breadcrumbs, pepper, cheese, salt, & egg whites; stir well.
  • Step #6 Divide spinach mixture into 12 equal portions, shaping each into a 3 1/2-inch cake.
  • Step #7 Dredge cakes in remaining breadcrumbs.
  • Step #8 Coat skillet with cooking spray; add 1 tsp oil, & place over med-heat/flame until hot.
  • Step #9 Add 4 cakes, & cook 6 mins or until lightly browned, turning cakes carefully after 3 mins.
  • Step #10 Repeat procedure with remaining olive oil & cakes.
  • Step #11 Serve as soon as possible with Red Pepper Sauce, if desired.
