Roasted-garlic Puppodums Recipe

Ingredients
  • 2 large whole garlic heads
  • 2 finely sliced seeded serrano chiles
  • 1 tbsp olive oil
  • 8 Indian puppodums (such as Sharwood's)
  • 2 tbsps tomato paste
  • 1/4 c minced fresh cilantro

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Remove white papery skin from garlic heads (do not peel or separate the cloves).
  • Step #3 Wrap each head separately in foil wrap.
  • Step #4 Bake at 400° for 45 mins; cool 10 mins.
  • Step #5 Separate cloves; squeeze to extract garlic pulp.
  • Step #6 Discard skins.
  • Step #7 Combine the garlic, cilantro, oil, tomato paste, & chiles.
  • Step #8 Microwave 1 puppodum at a time at HIGH 40 to 50 seconds or until edges curl & entire puppodum is cream colored, turning as necessary to avoid uncooked spots.
  • Step #9 Spread 1 tbsp garlic spread over each puppodum.
