Smashed Peas With Mint Bruschetta Recipe

Ingredients
  • 1/2 baguette
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 10-oz package frozen peas, thawed
  • 1 sliced fresh mint
  • 2 tbsps extra-virgin olive oil

Directions
  • Step #1 Thinly slice half a baguette.
  • Step #2 Place the rounds on a baking sheet & broil them until they're golden brown (about 1 1/2 mins per side).
  • Step #3 Process the peas in a food processor/blender until roughly sliced.
  • Step #4 Stir in the mint, oil, salt, & pepper.
  • Step #5 Spread the mixture on the rounds.
  • Step #6 Garnish the bruschetta with fresh mint leaves, if desired.
