Spinach, Sun-dried Tomato, And Parmesan Rolls Recipe

Ingredients
  • 1 c sliced onion
  • 1 c boiling water
  • 1/4 tsp freshly ground black pepper
  • 1/2 c part-skim ricotta cheese
  • 10 (14 x 9-inch) sheets frozen phyllo dough, thawed
  • 3/4 c fat-free ricotta cheese
  • 1/2 c (2 oz) grated fresh Parmesan cheese
  • 1/2 c sun-dried tomatoes, packed without oil
  • 2 (10-oz) packages frozen sliced spinach, thawed, drained, & squeezed dry
  • 1 tsp dried basil
  • 4 garlic cloves, minced
  •  Cooking spray
  • 1/4 c dry breadcrumbs
  • 1 large egg white
  • 1 tsp dried oregano
  • 2 tsps olive oil
  • 1/2 tsp salt

Directions
  • Step #1 Combine boiling water & tomatoes in a bowl; let this stand 30 mins or until soft.
  • Step #2 Drain & chop.
  • Step #3 Preheat oven to 350°.
  • Step #4 Heat olive oil In a large-ish nonstick skillet over medium-high heat.
  • Step #5 Add onion, basil, oregano, & garlic; sauté 4 mins or until onion begins to brown.
  • Step #6 Stir in tomatoes & spinach; cook 1 min.
  • Step #7 Remove from heat; cool 10 mins.
  • Step #8 Stir in cheeses, salt, pepper, & egg white; mix well.
  • Step #9 Place 1 phyllo sheet on a large cutting board or work surface (cover remaining dough to prevent drying), & lightly coat with cooking spray.
  • Step #10 Sprinkle top with 1 1/2 tsps breadcrumbs.
  • Step #11 Repeat layers 3 times; top this with 1 phyllo sheet.
  • Step #12 Gently press phyllo layers together.
  • Step #13 Lightly coat top phyllo sheet with cooking spray.
  • Step #14 Spoon half of the spinach mixture along 1 long edge of phyllo, leaving a 2-inch border.
  • Step #15 Fold over short edges of phyllo to cover 2 inches of spinach mixture on each end.
  • Step #16 Starting at long edge, roll up jelly-roll fashion.
  • Step #17 Place roll, seam side down, on a baking sheet coated with cooking spray.
  • Step #18 Cut diagonal slits into top of roll using a sharp knife.
  • Step #19 Lightly coat with cooking spray.
  • Step #20 Repeat procedure with the remaining phyllo, breadcrumbs, cooking spray, & spinach mixture.
  • Step #21 Bake at 350° for 22 mins or until golden.
  • Step #22 Let stand 5 mins.
  • Step #23 Cut each roll this into 5 equal slices.
