Thai Eggplant Dip Recipe

Ingredients
  • 2 tsps fresh lemon juice
  • 3 tbsps grated Parmesan cheese
  • 4 (6-inch) pitas
  • 1/4 tsp black pepper
  • 1 (1-lb) eggplant
  • 2 tbsps sliced fresh basil
  • 1 tsp olive oil
  • 2 tbsps water
  • 1/8 tsp salt
  • 1/3 c golden raisins, sliced
  • 1 garlic clove, minced
  • 1/2 c (2 oz) shredded part-skim mozzarella cheese

Directions
  • Step #1 Preheat oven to 425°.
  • Step #2 Pierce eggplant several times with a fork, & wrap in foil wrap.
  • Step #3 Place eggplant on a baking sheet, & bake this at 425° for 1 hr.
  • Step #4 Cool slightly.
  • Step #5 Peel, seed, & mash eggplant with a potato masher.
  • Step #6 Combine raisins & water in a small bowl.
  • Step #7 Cover up with plastic wrap; vent.
  • Step #8 Microwave at high 30 seconds.
  • Step #9 Let stand, covered, 10 mins; drain.
  • Step #10 Add raisins, basil, & next 5 ingredients (basil through garlic) to eggplant.
  • Step #11 Preheat broiler.
  • Step #12 Sprinkle top pitas with cheeses, & broil for 2 mins or until cheese melts.
  • Step #13 Cut each pita into 6 wedges, & serve this with eggplant dip.
