Chipotle-lime Crab Crisps Recipe

Ingredients
  • 3/4 lb lump crabmeat, shell pieces removed
  • 1 tbsp finely sliced celery
  • 2 tbsps finely sliced red bell pepper
  • 1 tbsp fresh lime juice
  • 1 medium avocado, peeled & sliced
  • 2 tbsps finely sliced fresh cilantro
  • 2 tbsps thinly sliced green onions
  • 1 tsp sliced canned chipotle chile in adobo sauce
  • 48 baked tortilla chips
  • 1/2 c reduced-fat mayonnaise
  • 2 tbsps finely sliced peeled jicama
  • 1/4 c (1 oz) grated fresh Parmesan cheese

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Arrange tortilla chips in a single layer on 2 baking sheets.
  • Step #3 Combine mayonnaise, chile, & juice, stirring with a whisk.
  • Step #4 Combine crab & next 6 ingredients (through celery) in a medium bowl.
  • Step #5 Add mayonnaise mixture, stirring until well mixd.
  • Step #6 Spoon about 1 tbsp crab mixture onto each chip.
  • Step #7 Bake at 350° for 5 mins or until thoroughly heated; top the chips evenly with avocado.
