Smoky Red Pepper Dip Recipe

Ingredients
  • 2 tsps olive oil
  • 2 c sliced red onion
  • 2 garlic cloves
  • 1/4 c dry breadcumbs
  • 1/8 tsp salt
  • 1 tbsp red wine vinegar
  • 1/8 tsp hot sauce
  • 1/4 c plain fat-free yogurt
  • 2 medium red bell peppers

Directions
  • Step #1 Cut bell peppers in half lengthwise; discard seeds & membranes.
  • Step #2 Place pepper halves, skin sides up, on a foil wrap-lined baking sheet; flatten with hand.
  • Step #3 Arrange onion & garlic around peppers on baking sheet.
  • Step #4 Broil 10 mins or until blackened.
  • Step #5 Place in a zip-top plastic bag; seal.
  • Step #6 Let stand 15 mins; peel.
  • Step #7 Place peppers, onion, & garlic in a food processor/blender; process until finely sliced.
  • Step #8 Add remaining ingredients; process until smooth.
  • Step #9 Serve with toasted pita triangles.
