Belgian Endive Shrimp Spears Recipe

Ingredients
  • 1/3 c mayonnaise
  • 1 tsp Dijon mustard
  • 18 red or white Belgian endive leaves (8 to 12 oz. total), rinsed & crisped
  • 8 oz cooked tiny shrimp, rinsed, well drained, & carefully patted dry
  • 1 tsp lemon juice
  •  Salt & ground white pepper
  • 3 tbsps thinly sliced fresh chives

Directions
  • Step #1 In a small bowl, lemon juice, mix mayonnaise, & mustard.
  • Step #2 Stir in shrimp & 2 tbsps chives.
  • Step #3 Add salt & white pepper to taste.
  • Step #4 Spoon equal portions shrimp mixture (about 1 tbsp) on bottom end of each endive leaf; arrange on a platter.
  • Step #5 Sprinkle top with remaining chives.
