Ingredients
1/4 c butter
1 lb skinless, boneless chicken breast halves
1/2 c all-purpose flour
1/2 c white wine
2 lemons, juiced
2 c chicken broth
salt & pepper to taste
1 tsp sliced fresh parsley
1 tsp cornstarch
4 eggs, beaten
Directions
Step #1 Coat chicken with flour, then egg beat, then saute in a large skillet until almost cooked through.
Step #2 Drain on paper toweling.
Step #3 Preheat oven to 300F degrees F (150 degrees C).
Step #4 In a medium saucepan mix the wine, salt & pepper to taste, broth, parsley, butter or margarine & lemon juice over medium low heat.
Step #5 Stir together while heating slowly.
Step #6 When butter or margarine has melted, slowly stir in the cornstarch until sauce thickens slightly.
Step #7 Place chicken in a 9x13 inch baking dish & pour the sauce over all.
Step #8 Bake at 300F degrees F (150 degrees C) for about 10 to 15 mins, or until chicken is cooked through & juices run clear.
