Chinese Coconut Pudding Recipe

Ingredients
  • 1 c white sugar
  • 1 tsp coconut extract
  • 1 3/8 c boiling water
  • 2 tbsps unflavored gelatin
  • 2 egg whites
  • 1 (5 oz) can evaporated milk

Directions
  • Step #1 Lightly grease a 1-quart mold.
  • Step #2 In a large bowl, dissolve gelatin in boiling water.
  • Step #3 Stir in evaporated milk, sugar & coconut extract.
  • Step #4 Allow to cool to about room temp.
  • Step #5 Meanwhile, whip egg whites until fluffy.
  • Step #6 When gelatin mixture has cooled to about room temp, place gelatin bowl in an ice bath.
  • Step #7 When mixture begins to set, fold egg whites into it.
  • Step #8 Spread in prepared mold & put in the fridge until set.
