Brie With Cranberry-pecan Filling Recipe

Ingredients
  • 1 baguette (8 oz.), thinly sliced
  • 2 tbsps sliced pecans, plus 3 pecan halves
  • 2 tbsps sliced dried sweetened cranberries
  • 1 wedge or round (8 oz.) firm-ripe brie cheese, chilled
  • 1/2 tsp finely shredded orange peel

Directions
  • Step #1 Place sliced pecans & pecan halves in a 9-inch pie pan.
  • Step #2 Bake in a 325° regular or convection oven, until sliced nuts are golden under skin, shaking pan once, 6 to 8 mins.
  • Step #3 In a small bowl, mix toasted sliced nuts, cranberries, & orange peel.
  • Step #4 Split cheese in half horizontally to make two layers.
  • Step #5 Set one layer, on a plate or, if baking it, cut side up, in a shallow, ovenproof ramekin or on an ovenproof rimmed plate.
  • Step #6 Spread cranberry mixture evenly over cheese.
  • Step #7 Set other layer, cut side down, on filling & press down carefully.
  • Step #8 Arrange nut halves on top.
  • Step #9 Serve at about room temp (see notes) or warm.
  • Step #10 To serve warm, bake in a 325° regular or convection oven until cheese is warm & beginning to soften, 6 to 8 mins.
  • Step #11 Serve baguette slices alongside.
