Winter-greens Turnovers Recipe

Ingredients
  • 1/2 c grated parmesan
  • 1 medium onion, sliced
  • 3 tbsps olive oil
  • 1/4 c whole-milk ricotta
  • 1/2 tsp each salt & freshly ground black pepper
  • 1 bunch Swiss chard (ribs & stems discarded), coarsely sliced
  • 1/2 c butter
  • 3 cloves garlic, minced
  • 1 bunch dandelion greens (stems discarded), sliced
  • 7 sheets phyllo, thawed
  • 1 egg

Directions
  • Step #1 Heat a large frying pan over medium-high heat; add olive oil.
  • Step #2 Add onion & cook, stirring, until translucent, about 3 mins.
  • Step #3 Add garlic & cook 2 mins more.
  • Step #4 Add Swiss chard & dandelion greens to pan in large handfuls & cook, stirring, until any liquid is evaporated.
  • Step #5 Transfer mixture to a medium bowl & stir in the parmesan, egg, salt, ricotta, & pepper.
  • Step #6 Preheat oven to 350°.
  • Step #7 Melt butter in a small saucepan.
  • Step #8 Unroll phyllo & cover with a moist towel.
  • Step #9 Working with 1 sheet of phyllo at a time, arrange sheet so a short side is facing you.
  • Step #10 Cut sheet lengthwise into three even strips & brush each strip liberally with butter.
  • Step #11 Place a heaping tbsp.
  • Step #12 of greens at the bottom of each strip of phyllo, slightly off center.
  • Step #13 Fold the dough to make a triangle, then continue folding & turning (like you are folding a flag) to make the turnover.
  • Step #14 Brush top this with butter & put on a baking sheet.
  • Step #15 Repeat with remaining phyllo, greens, & butter.
  • Step #16 Bake finished turnovers until puffed & brown, about 30 mins.
  • Step #17 Serve hot.
