- 20 (1/4-inch-thick) slices diagonally cut French bread baguette
- 1/4 c thinly sliced fresh basil
- 1 large orange bell pepper
- 2 tbsps white wine vinegar
- 1/4 tsp freshly ground black pepper
- 1 large red bell pepper
- 1/2 c sliced red onion
- 1 large yellow bell pepper
- 2 tbsps sliced fresh cilantro
- 1 1/2 tsps sugar
Directions
- Step #1 Preheat broiler.
- Step #2 Cut bell peppers in half lengthwise; discard seeds & membranes.
- Step #3 Place pepper halves, skin sides up, on a foil wrap-lined baking sheet; flatten with hand.
- Step #4 Broil 15 mins or until blackened.
- Step #5 Place in a zip-top plastic bag; seal.
- Step #6 Let stand 15 mins.
- Step #7 Peel & finely chop.
- Step #8 Combine bell pepper, basil, onion, & cilantro in a medium bowl.
- Step #9 Combine vinegar, sugar, & black pepper in a small bowl, oil, stirring with a whisk.
- Step #10 Pour vinegar mixture over bell pepper mixture, tossing to coat.
- Step #11 Cover up & chill 2 hrs.
- Step #12 Serve with bread slices.
