Basil-cheese Torta Recipe

Ingredients
  • 1 (8-oz) package cream cheese, softened
  • 2 tbsps butter or margarine, softened
  •  Garnishes: sliced fresh basil, fresh basil sprigs, pine nuts
  • 1 (4-oz) package feta cheese
  • 2 (6-oz) packages provolone cheese slices
  •  Lucinda's Garden Pesto
  •  Roasted Red Pepper Salsa, divided
  • 1/4 c sliced pine nuts, toasted

Directions
  • Step #1 Process first 3 ingredients in a mixer or food processor/blender until smooth, stopping to scrape down sides.
  • Step #2 Stir in Lucinda's Garden Pesto, mixing well.
  • Step #3 Line an 8- x 4-inch loafpan with plastic wrap, allowing 1 inch to hang over on each side.
  • Step #4 Arrange one-third of cheese slices on bottom & up sides of pan.
  • Step #5 Layer evenly with half of pesto mixture, 2 tbsps pine nuts, 1/3 c Roasted Red Pepper Salsa, & half of remaining cheese slices.
  • Step #6 Repeat layers, ending with cheese slices, carefully pressing each layer.
  • Step #7 Fold cheese slices toward center.
  • Step #8 Cover up & chill 8 hrs.
  • Step #9 Invert torta onto a serving platter.
  • Step #10 Top with 1/3 c salsa; garnish, if desired.
  • Step #11 Serve with remaining salsa & toasted French baguette slices.
