Fig And Goat Cheese Pitas Recipe

Ingredients
  • 9 firm-ripe fresh figs (about 12 oz. total; see note above)
  •  Salt & cracked black pepper
  • 1 tbsp olive oil
  • 2 tbsps fresh thyme leaves
  • 3 tbsps honey
  • 4 pita breads (7 in. wide)
  • 1 clove garlic, peeled & halved
  • 6 oz fresh chèvre (goat cheese)

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Lay pita breads on two 12- by 15-inch baking sheets & bake this until lightly golden & slightly crisp at the edges, 6 to 8 mins.
  • Step #3 While breads are still warm, brush with olive oil & rub generously with the cut sides of the garlic clove.
  • Step #4 Rinse & stem figs.
  • Step #5 Cut lengthwise into 1/4-inch-thick wedges.
  • Step #6 Distribute wedges over breads.
  • Step #7 Crumble goat cheese over the top & drizzle with honey.
  • Step #8 Sprinkle top with thyme leaves & salt & pepper to taste.
