Apricot-pecan-brie Tarts Recipe

Ingredients
  • 25 pecan halves
  • 1/3 c apricot preserves
  • 1 1/2 (17 1/4-oz) packages frozen puff pastry sheets, thawed*
  • 1 (8-oz) package Brie, chilled

Directions
  • Step #1 Bake pecans at 350° in a shallow pan for 10 to 15 mins or until toasted; cool.
  • Step #2 Remove rind from cheese; cut cheese into 24 cubes, & set aside.
  • Step #3 Roll pastry into a 15- x 10-inch rectangle on a lightly floured surface; cut into 24 squares.
  • Step #4 Fit squares into miniature muffin pans, extending corners slightly above c rims.
  • Step #5 Bake pastry at 425° for 10 to 12 mins or until it begins to brown.
  • Step #6 Remove from oven, & carefully press handle of a wooden spoon into center of each pastry, forming tart shells.
  • Step #7 Spoon 1/2 tsp preserves into each shell; top this with a cheese cube & a pecan half.
  • Step #8 Bake 5 more mins or until cheese melts; serve as soon as possible.
  • Step #9 * 24 wine-and-cheese crackers may be substituted.
  • Step #10 Top each cracker with 1/2 tsp preserves, cheese, & a pecan half; place on a baking sheet.
  • Step #11 Bake at 350° for 5 mins or until cheese melts.
  • Step #12 For testing, us used Prima Gourmet crackers.
