Smoked Salmon And Cheese Mini Twice-baked Potatoes Recipe

Ingredients
  • 2 tbsps fat-free milk
  •  Cooking spray
  • 1/2 tsp salt, divided
  • 6 small Yukon gold or red potatoes (about 2 lbs)
  • 1/2 c (2 oz) finely grated white cheddar cheese
  • 2 tbsps finely sliced smoked salmon (1 oz)
  • 1 tbsp butter
  • 1 tsp olive oil
  • 1/2 tsp black pepper

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Rub potatoes with oil; sprinkle with 1/4 tsp salt.
  • Step #3 Place potatoes on a jelly-roll pan coated with cooking spray.
  • Step #4 Bake at 400° for 35 mins or until tender.
  • Step #5 Remove from oven; cool 10 mins.
  • Step #6 Cut potatoes in half crosswise; cut off a small portion of the rounded edge so the potato will stand upright.
  • Step #7 Carefully scoop out about 1 tsp pulp from each half, leaving the shells intact.
  • Step #8 Combine potato pulp, cheese, milk, pepper, butter, & remaining 1/4 tsp salt in a bowl.
  • Step #9 Spoon about 1 heaping tsp potato mixture into each potato shell.
  • Step #10 Arrange stuffed potatoes on a jelly-roll pan; top each with 1/2 tsp sliced salmon.
  • Step #11 Bake at 400° for 15 mins or until thoroughly heated.
