Sweet Pea Spread Recipe

Ingredients

2 (10-oz) packages frozen sweet peas (about 3 c), cooked according to package directions & cooled
3 garlic cloves, sliced
3 tbsps extra-virgin olive oil
2 to 3 tbsps fresh lemon juice (about 1 medium lemon)
Salt, to taste
Freshly ground pepper, to taste

Directions

Step #1 Place peas & garlic in a food processor/blender; slowly add olive oil while processor is running, & puree until smooth.
Step #2 Stir in remaining ingredients.
Step #3 Chill, covered, until ready to serve.
