Roasted Chile-spiced Edamame Recipe

Ingredients
  • 1/2 tsp ground red pepper
  • 1 tbsp New Mexico red chile powder or chili powder
  • 1/2 tsp ground ginger
  •  Cooking spray
  • 3/4 tsp sea salt
  • 1 (14-oz) package frozen blanched shelled edamame (green soybeans), thawed
  • 1 tsp onion powder

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Arrange edamame in a single layer on a baking sheet, & coat with cooking spray.
  • Step #3 Combine chile powder & remaining ingredients.
  • Step #4 Sprinkle top over edamame; toss to coat.
  • Step #5 Bake edamame at 350° for 1 1/2 hrs, stirring beans every 30 mins.
