Mini Pork Sandwiches Recipe

Ingredients
  • 2 tbsps sliced fresh rosemary
  • 1/2 c mayonnaise
  • 1/2 c Dijon mustard
  • 1 clove garlic, minced
  • 3 tbsps capers, sliced
  • 1 tbsp brandy
  •  40 party rolls or small square dinner rolls (we tested with Pepperidge Farm country-style soft dinner rolls)
  • 2 tbsps prepared horseradish
  • 1 1/2 tbsps black peppercorns, crushed
  •  Several bunches arugula
  • 2 tbsps olive oil
  • 3 lbs pork tenderloins
  • 1 tsp salt
  •  Sweet gherkin pickles, thinly sliced

Directions
  • Step #1 Combine rosemary, crushed peppercorns, & salt.
  • Step #2 Rub mixture over tenderloins.
  • Step #3 Fold thin end under each tenderloin; secure with wooden picks.
  • Step #4 Place tenderloins on a lightly greased rack in a broiler pan.
  • Step #5 Drizzle with olive oil.
  • Step #6 Bake at 375° for 25 to 30 mins or until a meat thermometer inserted in thickest part registers 160° (medium).
  • Step #7 Let stand 5 mins.
  • Step #8 Thinly slice tenderloins.
  • Step #9 Combine mayonnaise & next 3 ingredients.
  • Step #10 Combine mustard & capers.
  • Step #11 Spoon sauces into separate serving bowls.
  • Step #12 Serve pork with sauces, gherkins, arugula, & rolls for making do-it-yourself sandwiches.
