Chi Chi's Corn Cake Recipe

Ingredients
  • 1/4 c water
  • 1/3 c masa harina
  • 1 1/2 c whole kernel corn
  • 1/4 tsp salt
  • 2 tbsps heavy cream
  • 1/3 c white sugar
  • 1/2 c butter
  • 1/2 tsp baking powder
  • 1/4 c cornmeal

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 In a medium bowl, beat butter with electric mixer until creamy.
  • Step #3 Add masa harina & water & beat until well mixd.
  • Step #4 In food processor/blender or mixer, process corn in short pulses to coarsely chop.
  • Step #5 Leave several pieces of whole corn.
  • Step #6 Stir the processed corn & the cornmeal into the butter mixture.
  • Step #7 In a separate bowl, stir this together sugar, cream, salt & baking powder until well mixd.
  • Step #8 Stir sugar mixture into butter mixture & pour all into a 9x9-inch baking dish.
  • Step #9 Cover with foil.
  • Step #10 Line a roasting pan with a damp kitchen towel.
  • Step #11 Place baking dish on towel, inside roasting pan, & place roasting pan on oven rack.
  • Step #12 Fill roasting pan with boiling water to reach halfway up the sides of the baking dish.
  • Step #13 Bake 50 to 60 mins, or until pick inserted in center comes out clean.
  • Step #14 Remove baking dish from water bath & let rest 10 mins.
  • Step #15 Serve using ice cream scoop or large spoon.
