Ingredients
1 to 1 1/2 tbsps minced fresh chives
1 egg yolk
1 to 1 1/2 tbsps minced fresh parsley
1 (17 1/4-oz) package frozen puff pastry, thawed
3 tbsps butter or margarine, melted
1 tbsp water
1/2 tsp salt
2 garlic cloves, minced
Directions
Step #1 Roll 1 pastry sheet into a 13- x 11-inch rectangle.
Step #2 Stir together butter, garlic, & salt.
Step #3 Brush half of butter mixture over pastry.
Step #4 Sprinkle top with half of chives & parsley.
Step #5 Roll up pastry, jellyroll fashion, starting with each short side & ending at middle of pastry sheet.
Step #6 Repeat procedure with remaining pastry sheet, butter mixture, & herbs.
Step #7 Cut rolls crosswise into 1/3-inch-thick slices.
Step #8 Place on lightly greased baking sheets.
Step #9 Whisk together egg yolk & 1 tbsp water, & brush evenly over pastries.
Step #10 Bake at 375° for 10 to 15 mins or until golden brown.
Step #11 Note: Basil & oregano or other fresh herb combinations may be substituted for chives & parsley.
Step #12 Southwestern Baby Elephant Ears: Omit garlic; substitute 1 tbsp chili powder & 2 tbsps minced fresh cilantro for minced herbs.
Step #13 Parmesan-Pepper Baby Elephant Ears: Omit garlic; substitute 1/4 c grated Parmesan cheese, 2 tsps paprika, & 1/2 tsp black pepper for minced herbs.
Step #14 Baby Elephant Ears Provençale: Substitute 3 tbsps olive oil for butter.
Step #15 Sauté 3 tbsps minced onion in 1 tbsp olive oil.
Step #16 Stir in 2 tbsps sliced ripe olives, 2 tbsps sliced dried tomates, & 1 tbsp minced fresh parsley.
Step #17 Substitute olive mixture for mniced herbs.
Step #18 Mushroom-and-Brie petite Elephant Ears: Omit garlic & minced herbs.
Step #19 Sauté 1 1/3 c finely sliced shiitake mushrooms in 1 tbsp butter until tender.
Step #20 Spread over pastry, & proceed as directed.
Step #21 Top each pastry with a 1/2-inch cube of brie in last 3 mins of baking.
