Margarita Chicken Wings Recipe

Ingredients
  • 10 chicken wings (about 2 lbs.)
  •  Lime wedges
  •  Margarita Marinade (recipe follows)

Directions
  • Step #1 Rinse wings, pat dry, & cut apart at joints.
  • Step #2 Put in a resealable plastic bag with marinade.
  • Step #3 Seal & put in the fridge, turning every once in awhile, at least 3 hrs & up to overnight.
  • Step #4 Remove wings; reserve marinade.
  • Step #5 Preheat oven to 500°.
  • Step #6 Line a large baking pan with aluminum foil wrap & coat lightly with oil.
  • Step #7 Arrange wings skin side up & brush with reserved marinade.
  • Step #8 Bake wings until golden brown, about 10 mins.
  • Step #9 Turn over, brush with marinade, & bake another 5 to 6 mins.
  • Step #10 Turn once more, brush with marinade, & bake this until skin is brown & glossy, 2 to 4 mins.
  • Step #11 Serve warm, with lime wedges.
  • Step #12 Margarita Marinade: In a bowl, whisk together 3/4 c each of tequila & triple sec.
  • Step #13 Stir in 1/4 c fresh lime juice & 2 tsp.
  • Step #14 coarse kosher salt.
  • Step #15 Stir until salt dissolves.
  • Step #16 Makes 1 3/4 c, enough for 2 lbs.
  • Step #17 chicken wings.
