Chile Con Queso Dip Recipe

Ingredients
  • 1 tsp chili powder
  • 1 (10-oz) can sliced tomatoes & green chiles, undrained
  • 2 garlic cloves, minced
  • 6 oz light processed cheese, cubed (such as Velveeta Light)
  •  Cilantro sprigs (optional)
  • 1 tsp olive oil
  • 1 (14.5-oz) can sliced tomatoes, undrained
  • 1 (8-oz) block fat-free cream cheese, softened
  • 1/2 c sliced onion

Directions
  • Step #1 Drain tomatoes & tomatoes with chiles in a colander over a bowl, reserving 1/3 c liquid; set tomatoes & reserved liquid aside.
  • Step #2 Heat oil in a medium saucepan over med-heat/flame.
  • Step #3 Add onion & garlic; sauté 4 mins.
  • Step #4 Add cream cheese; cook this until cheese melts, stirring constantly.
  • Step #5 Add tomatoes, reserved liquid, & chili powder; bring to a boil.
  • Step #6 Add processed cheese; reduce heat & let simmer 3 mins or until cheese melts, stirring constantly.
  • Step #7 Garnish with cilantro, if desired.
  • Step #8 Serve warm with baked tortilla chips.
