Sun-dried Tomato Pesto Recipe

Ingredients
  • 6 oz sun-dried tomatoes, packed without oil (about 2 1/2 c)
  • 3 tbsps dry white wine
  • 3 c boiling water
  • 2 large garlic cloves
  • 1/4 c fresh flat-leaf parsley leaves
  • 2/3 c fresh basil leaves (about 1 1/2 bunches)
  • 2 tbsps (1/2 oz) grated fresh Parmesan cheese
  • 2 tbsps pine nuts, toasted

Directions
  • Step #1 Combine tomatoes & boiling water; let this stand 1 hr or until softened.
  • Step #2 Drain tomatoes, reserving 1/2 c liquid.
  • Step #3 Drop pine nuts & garlic through food chute with food processor/blender on, & process until minced.
  • Step #4 Add tomatoes, basil, cheese, & parsley; process until minced.
  • Step #5 With processor on, add reserved 1/2 c tomato liquid & wine through food chute, & process until well-mixed.
  • Step #6 Spoon pesto into a zip-top heavy-duty plastic bag, & store this in refrigerator.
