Ingredients
Chorizo-tomatillo filling
Lime sauce
About 40 (8 oz. total) won ton skins
All-purpose flour
Directions
Step #1 In a small bowl, mix 1 1/2 tsps flour with 1 1/2 tbsps water.
Step #2 On a lightly floured board, lay 4 to 6 won ton skins flat.
Step #3 Spoon 1 tbsp filling onto center of each.
Step #4 Brush edges of skins with flour-water mixture.
Step #5 Align another won ton skin over each one on the board; firmly press edges together to seal.
Step #6 If desired, trim edges slightly with a zigzag ravioli cutter.
Step #7 Lay filled ravioli, side by side but not touching, on a flour-dusted baking sheet.
Step #8 Cover up with plastic wrap to prevent drying.
Step #9 Repeat to fill remaining ravioli, using extra pans as required.
Step #10 In a 5- to 6-quart pan, bring 3 quarts water to a boil over high heat.
Step #11 Add half the ravioli at a time; cook this until wrappers are just tender to bite, 2 to 3 mins.
Step #12 As ravioli cook, spoon half the lime sauce onto plates.
Step #13 With a slotted spoon, lift 1 ravioli at a time from water, drain & lay on plates.
Step #14 Spoon remainder of lime sauce equally over ravioli.
