Chocolatetalian Cream Cake Recipe

Ingredients
  • 2 c all-purpose flour
  • 1/4 c unsweetened cocoa powder
  • 1/2 c shortening
  • 1 c shredded coconut
  • 1 tsp baking soda
  • 1/2 c butter
  • 1 c sliced pecans
  • 1 c buttermilk
  • 1 tsp vanilla extract
  • 1/4 c unsweetened cocoa powder
  • 1 c cream cheese
  • 2 c white sugar
  • 1 c sliced pecans
  • 1 tsp vanilla extract
  • 1/2 c butter
  • 5 eggs
  • 4 c sifted confectioners' sugar

Directions
  • Step #1 Preheat oven to 325F degrees F (165 degrees C).
  • Step #2 Grease & flour three 8-inch round cake pans.
  • Step #3 Separate the eggs.
  • Step #4 Cream 1/2 c of the butter, shortening & sugar together.
  • Step #5 Add egg yolks, one at a time, beating after each addition.
  • Step #6 Stir in 1 tsp of the vanilla.
  • Step #7 Sift soda, flour & 1/4 c cocoa together.
  • Step #8 Add alternately with buttermilk to the creamed mixture, beginning & ending with dry ingredients.
  • Step #9 Stir in the coconut & 1 c of the sliced pecans.
  • Step #10 Beat the egg whites until stiff peaks form & fold into the batter.
  • Step #11 Pour batter into the prepared cake pans.
  • Step #12 Bake at 325F degrees F (165 degrees C) for 25 to 30 mins.
  • Step #13 Let cakes cool completely before frosting between layers & on sides.
  • Step #14 To Make Frosting: Cream the cream cheese & butter together.
  • Step #15 Sift confectioner's sugar & 1/4 c cocoa, beating in a little at a time until well-creamed.
  • Step #16 Add 1 tsp vanilla & 1 c pecans.
